This air fryer version cooks faster than traditional oven methods, while still delivering all the rich, comforting flavors you love. Perfect for a family dinner or meal prep!

 Ingredients:

For the Meatloaf:

1 lb (450g) ground beef (or half beef, half pork)

1/2 cup Italian breadcrumbs

1/4 cup milk

1 large egg

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

2 tbsp chopped fresh parsley (or 1 tsp dried)

1/2 cup shredded mozzarella (optional filling)

1/2 small onion, finely chopped

2 tbsp ketchup (optional for added moisture)

For the Glaze:

1/3 cup marinara sauce or tomato sauce

1 tbsp ketchup

1 tsp balsamic vinegar (optional)

1 tsp sugar (optional)

 Equipment:

Air fryer (5-quart or larger preferred)

Aluminum foil or parchment liner

Meat thermometer (recommended)

 Instructions:

Prepare the Meat Mixture

In a large bowl, combine:

Ground meat, breadcrumbs, milk, egg, Parmesan, seasonings, parsley, onion, and ketchup (if using).

Mix until just combined—do not overmix.

Optional: Press half the mixture into a small loaf shape, add mozzarella in the center, then top with the remaining meat mixture to enclose the cheese.

Shape the Loaf

Form into a loaf shape about 6–7 inches long and 3 inches wide.

Place on a small sheet of parchment or foil that fits your air fryer basket. This makes cleanup easier.

Preheat Air Fryer

Preheat your air fryer to 350°F (175°C) for 3–5 minutes.

Cook the Meatloaf

Place the meatloaf in the basket.

Air fry at 350°F (175°C) for 25 minutes.

Add Glaze

After 25 minutes, brush the glaze mixture over the top of the meatloaf.

Return to the air fryer and cook for another 5–10 minutes, or until the internal temperature reaches 160°F (71°C).

Tip: If your meatloaf starts to brown too quickly, cover the top loosely with foil during the last 5 minutes.

Rest Before Slicing

Remove from the air fryer and let rest for 5–10 minutes to allow juices to redistribute.
