Lasagna Roll-Ups are a fun, easy twist on classic lasagna! Instead of layering, lasagna noodles are rolled with a creamy ricotta filling, covered in rich marinara sauce, and topped with gooey melted cheese. This dish is perfect for a make-ahead meal, freezer-friendly dinners, or a special weeknight treat.

Ingredients
For the Roll-Ups:
12 lasagna noodles, cooked & drained
1 lb (450g) ground beef or Italian sausage (optional)
1 (15 oz) container ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated feta cheese
1 egg
2 cups spinach, chopped (optional)
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
For the Sauce:
2 cups marinara sauce (store-bought or homemade)
½ tsp red pepper flakes (optional, for heat)
For Topping:
1 cup shredded mozzarella cheese
¼ cup grated feta cheese
Fresh basil or parsley for garnish
Instructions
Cook the Noodles:
Boil lasagna noodles according to package instructions. Drain, rinse with cold water, and lay flat on a baking sheet to prevent sticking.
Prepare the Filling:
In a bowl, mix ricotta, 1 cup mozzarella, ½ cup Parmesan, egg, spinach (if using), garlic, Italian seasoning, salt, and pepper. Stir until well combined.
Cook the Meat (If Using):
In a skillet over medium heat, cook ground beef or sausage until browned. Drain excess fat and mix with ½ cup marinara sauce.
Assemble the Roll-Ups:
Spread a thin layer of ricotta mixture on each lasagna noodle. If using meat, add a spoonful on top. Roll each noodle tightly and place seam-side down in a greased baking dish.
Add the Sauce & Cheese:
Pour the remaining marinara sauce over the roll-ups. Sprinkle with extra mozzarella and Parmesan cheese.
Bake:
Cover with foil and bake at 375°F (190°C) for 25 minutes. Uncover and bake for another 5 minutes until cheese is golden and bubbly.
Serve:
Garnish with fresh basil or parsley. Enjoy warm with garlic bread or a side salad!
