Ingredients
For the Lasagna Rolls:
12 lasagna noodles (traditional or oven-ready; not no-boil type)
1 tablespoon olive oil
2 cups ricotta cheese (whole milk recommended)
1 large egg
1½ cups shredded mozzarella cheese (divided)
½ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley or basil
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
2½ cups marinara sauce (store-bought or homemade)
Optional Add-ins:
1 cup cooked spinach (well-drained and chopped)
½ pound cooked ground beef or Italian sausage
¼ teaspoon red chili flakes (for heat)
½ teaspoon Italian seasoning
Instructions
Cook the Lasagna Noodles
Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to the package instructions until al dente (usually 8–10 minutes). Stir occasionally to prevent sticking. Once cooked, drain the noodles and lay them flat on a clean kitchen towel or parchment paper to cool.
Tip: Add a splash of olive oil to the boiling water to prevent sticking, and don’t rinse the noodles.
Prepare the Cheese Filling
In a large mixing bowl, combine the ricotta cheese, egg, 1 cup of mozzarella, Parmesan, parsley or basil, garlic powder, salt, and black pepper. Mix until smooth. If you’re adding cooked spinach, beef, or sausage, fold it into the cheese mixture now.

Assemble the Lasagna Rolls
Take one cooked lasagna noodle and lay it flat. Spoon about 2–3 tablespoons of the cheese mixture along the length of the noodle. Spread it evenly, leaving a small margin at each end. Carefully roll the noodle from one end to the other to form a spiral.
Repeat with the remaining noodles and filling.
Layer the Baking Dish
Preheat your oven to 375°F (190°C).
Spread ½ cup of marinara sauce on the bottom of a 9×13 inch baking dish to prevent sticking. Place the lasagna rolls seam side down into the dish. Arrange them snugly in a single layer.
Pour the remaining marinara sauce evenly over the top of the rolls, making sure each one is well coated. Sprinkle the remaining mozzarella cheese on top.
Bake the Lasagna Rolls
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.
