Leftover Mashed Potato Cheese Puffs:

Ingredients

  1. One cup of shredded cheddar cheese
  2. and two cups of leftover mashed potatoes
  3. 1/4 teaspoon garlic powder,
  4. 2 tablespoons minced chives (optional),
  5. and 1/4 cup grated Parmesan cheese
  6. Two large eggs;
  7. 1/2 cup breadcrumbs;
  8. Cooking spray or oil for greasing;
  9. Salt and pepper to taste

Instructions

1. Set the oven temperature to 400°F, or 200°C. Apply cooking spray or oil to a baking sheet to grease it.
2. Add the grated Parmesan cheese, shredded cheddar cheese, chopped chives (if using), garlic powder, salt, pepper, and any remaining mashed potatoes to a large mixing bowl. Stir until thoroughly blended.
3. In a another bowl, beat the eggs.
4. Using a spoon, scoop out spoonfuls of the mashed potato mixture and form them into patties or little balls.
5. Coat each ball or patty evenly with breadcrumbs after dipping it into the beaten eggs.
6. Transfer the covered patties or potato balls to the baking sheet that has been prepared.
7. Bake for 20 to 25 minutes in a preheated oven, or until the puffs are crispy and golden brown.
8. Serve hot as a delicious side dish or appetizer.
