Lemon Apple Cake
Ingredients
- Eggs: 2 large
- Sugar: 1/2 cup (100 g)
- Salt: A pinch
- Milk: 1/2 cup (120 ml / 4 fl oz)
- Sunflower Oil: 1/3 cup (80 ml / 2.7 fl oz)
- Flour: 1.5 cups (210 g)
- Baking Powder: 1 teaspoon
- Lemon Zest: Grated peel of 1 lemon
- Apple: 1, peeled, cored, and thinly sliced
- Butter: 1/4 cup (60 g), melted
- Sugar (for topping): 2 tablespoons
Directions
Prepare the Batter:
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, whisk together the eggs, sugar, and a pinch of salt until light and frothy.
- Gradually add the milk and sunflower oil, whisking until well combined.
- Sift in the flour and baking powder, and gently fold into the wet ingredients until a smooth batter forms.
- Add the grated lemon zest to the batter and mix gently.
Prepare the Mold:
6. Grease a 20 cm (8-inch) tall cake mold with butter and line it with baking paper.
Assemble the Cake:
7. Pour the batter into the prepared mold and spread it evenly.
8. Arrange the apple slices decoratively on top of the batter.
Add the Topping:
9. In a small saucepan, melt the butter and mix in 2 tablespoons of sugar.
10. Drizzle the melted butter and sugar mixture over the apples.
Bake:
11. Place the mold in the preheated oven and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
12. Let the cake cool in the mold for 10 minutes before transferring it to a wire rack to cool completely.
