Indulge in the bright and citrusy flavors of Lemon & Garlic Chicken Bites! These bite-sized chicken treats are marinated in a zesty lemon and garlic mixture, then baked to perfection. Perfect for a quick and easy dinner, lunch, or snack.

Ingredients:

1 pound boneless, skinless chicken breasts, pat dry with paper towel, cut into 1-inch pieces

 ½ teaspoon dried oregano

½ teaspoon dried basil

2 tablespoons finely chopped fresh parsley

 ½ teaspoon kosher salt

 ¼ teaspoon black pepper

 4 tablespoons Olive oil

 2 tablespoons minced garlic

 ½ medium lemon, juiced (about 2 tablespoons)

METHOD:

Put the oregano, parsley, basil, salt, and pepper in a small basin. Evenly sprinkle the chicken pieces on both sides. Toss to coat evenly.

Pour Oil  in a 12-inch pan over medium heat. To coat the pan’s base, tilt it gently.

To guarantee uniform cooking, add the chicken to the pan in an equal layer once it has melted. (Avoid packing the pan too full.)

Cook until the chicken is almost cooked through and both sides are golden brown, 8 to 10 minutes, turning halfway through.

 

Include the leftover butter. After the garlic has melted, sauté it for another minute or until it is aromatic and the chicken has reached an internal temperature of 160°F.

Pour lemon juice over the chicken and mix everything together.

AIR FRYER METHOD:

Preheat air fryer to 375°F (190°C).

Remove chicken from marinade, letting excess liquid drip off.

Place chicken bites in air fryer basket in a single layer (cook in batches if necessary).

Cook for 8-10 minutes or until internal temperature reaches 165°F (74°C).

Shake basket halfway through cooking.

Serve hot, garnished with lemon wedges and chopped parsley.
