Lemon Garlic Chicken with Orzo, Spinach & Feta

Ingredients 
For the chicken:
  1. 4 bone-in, skin-on chicken thighs
  2. 2 tbsp olive oil
  3. 3 garlic cloves, minced
  4. Zest and juice of 1 lemon
  5. 1 tsp dried oregano
  6. Salt and pepper to taste

For the orzo:

  1. 1 cup orzo pasta
  2. 2 cups chicken broth
  3. 2 cups fresh spinach
  4. 1 cup cherry tomatoes, halved
  5. ½ cup crumbled feta cheese
  6. 1 tbsp olive Oil
Directions 
Step 1: Preheat the oven to 375°F (190°C). Season chicken thighs with salt, pepper, and oregano.
Step 2: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes until golden and crispy. Flip and cook for another 3 minutes. Remove chicken and set aside.
Step 3: Add minced garlic to the skillet and sauté for 1 minute. Pour in lemon juice and zest, scraping up any browned bits. Add chicken broth, then return the chicken thighs to the skillet. Transfer to the oven and bake for 20 minutes.
Step 4: While the chicken bakes, cook orzo in a separate pot according to package instructions. Drain and toss with butter, fresh spinach, and cherry tomatoes until wilted.
Step 5: Plate the orzo, top with baked chicken, and sprinkle with crumbled feta. Serve warm!
