Loaded Broccoli Potato Pan
Parts and pieces:
Here is the Pan:
- four to five medium-sized potatoes, diced (Yukon Gold or Russet tend to work best).
- Fresh or frozen broccoli florets, to the extent of two cups
- tablespoon of olive oil
- To taste, season with salt and pepper
- Garlic powder, one teaspoon
- onion powder, half a teaspoon
- Smoked paprika, to taste (optional for added flavor): half a teaspoon
In regard to the Loaded Toppings:
- a standard cup of shredded cheddar cheese
- There is an optional serving of half a cup of sour cream.
- crumbled bacon from four to six pieces of cooked bacon (or half a cup of bacon crumbs)
- sliced green onions, two of them
- The use of fresh parsley as a garnish is optional.
Details to follow:
To begin, preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Toss the potatoes with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika (if used). The potatoes should be prepared by dicing them into small pieces that are around one inch in size.
Using a large baking sheet, arrange the potatoes on a single layer and spread them out evenly.
After the oven has been preheated, roast the potatoes for around 25 to 30 minutes, turning them over halfway through the cooking process, until they are golden brown and soft.
During the time that the potatoes are roasting, prepare the broccoli by steaming the broccoli florets until they are crisp-tender, which should take about five to seven minutes each. If you are using frozen broccoli, make sure to follow the instructions stated on the package.
You may also sauté the broccoli in a separate skillet with a little olive oil for four to five minutes over medium heat. This would be an alternative method.
Assemble the Loaded Pan: When the potatoes have reached the desired level of doneness and have turned a golden brown color, remove them from the oven and place the broccoli that has been steamed or sautéed on top.
After the potatoes and broccoli have been cooked, sprinkle the shredded cheddar cheese on top.
Return the skillet to the oven and continue cooking for an additional five to seven minutes, or until the cheese has melted and become bubbling.
4. Add the Toppings: After the cheese has melted, take the pan out of the oven and add the toppings.
To finish, sprinkle the top with chopped green onions, crumbled bacon, and any other seasonings that you want.
If desired, serve with a dollop of sour cream, and garnish with fresh parsley for a splash of color. Both of these options are available.
5. Serve: Serve the loaded broccoli potato pan as a side dish or as a main entrée as soon as possible. It is an excellent accompaniment to grilled meats, or it can be used as a vegetarian meal on its own (provided that the bacon is omitted).
