Loaded Sweet Potato Fries with Chipotle Lime Crema
Ingredients:
For the Sweet Potato Fries:
2 large sweet potatoes, cut into fries
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
For the Chipotle Lime Crema:
1/2 cup Greek yogurt or sour cream
1 tbsp mayonnaise (optional, for extra creaminess)
1 chipotle pepper in adobo sauce, finely chopped
1 tbsp adobo sauce (from the chipotle can)
1 tbsp lime juice
1/2 tsp garlic powder
1/4 tsp salt
Toppings:
1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
1/4 cup cooked and crumbled bacon (optional)
1/4 cup black beans (drained and rinsed)
1/4 cup diced red onion
1/4 cup diced tomatoes
1/4 cup chopped cilantro
1 small avocado, diced
1 jalapeño, sliced (optional)
Extra lime wedges for serving
Instructions:
Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prepare the Fries: In a large bowl, toss the sweet potato fries with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
Bake: Spread the fries in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.
Make the Crema: In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise (if using), chipotle pepper, adobo sauce, lime juice, garlic powder, and salt. Adjust seasoning as needed.
Melt the Cheese: Remove fries from the oven, sprinkle shredded cheese on top, and return to the oven for 2-3 minutes until melted.
Assemble the Loaded Fries: Transfer the cheesy fries to a serving plate. Top with bacon, black beans, red onion, tomatoes, cilantro, avocado, and jalapeños.
Drizzle and Serve: Drizzle the chipotle lime crema over the fries. Serve with extra lime wedges.
