These low-carb onion rings are stuffed with melty mozzarella, coated in a crispy almond flour and Parmesan crust, and air-fried until golden. A perfect keto appetizer or snack with no guilt and all the flavor.

 Ingredients (Makes about 12 rings)

1 large yellow onion, cut into ½-inch rings (use the largest outer rings)

6 mozzarella cheese sticks, cut in half (or mozzarella slices to fit inside rings)

For the Coating:

¾ cup almond flour

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp paprika

Salt & pepper to taste

For the Wet Dip:

2 large eggs, beaten

Optional:

Low-carb marinara or ranch for dipping

Crushed pork rinds for extra crunch (optional, mix with almond flour)

 Instructions

 Prepare Onion Rings & Cheese

Separate onion slices into rings. Select pairs of similar-sized rings (one slightly smaller than the other).

Place a piece of mozzarella cheese between two onion rings to “sandwich” the cheese inside.

Tip: Use smaller inner onion rings as the top ring to hold the cheese in.

 Set Up Dredging Stations

In one bowl: whisk eggs.

In another bowl: mix almond flour, Parmesan, garlic powder, paprika, salt, and pepper.

 Coat the Onion Rings

Carefully dip each stuffed ring in the egg, coating all sides.
