Ingredients:

  1.  1 large zucchini or 2 medium zucchinis
  2.  1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  3. 1/2 cup cooked ground beef or turkey (optional)
  4. 1/2 cup diced tomatoes
  5. 1/4 cup sliced jalapeños (fresh or pickled)
  6.  1/4 cup Greek yogurt
  7.  1/4 cup guacamole (optional)
  8. 1 teaspoon taco seasoning (optional)
  9.  Fresh cilantro for garnish (optional)

 Instructions:

1. Prepare the Zucchini Chips:

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchini into thin rounds (about 1/4 inch thick). Pat them dry with a paper towel to remove excess moisture.
  3. Arrange the zucchini slices on a baking sheet lined with parchment paper. Lightly brush them with olive oil and sprinkle with salt.

2. Bake the Zucchini:

Bake the zucchini slices in the preheated oven for about 15-20 minutes, flipping halfway through, until they are golden and crispy.

3. Assemble the Nachos:

– Once the zucchini chips are done, remove them from the oven. Layer the crispy zucchini with shredded cheese, cooked ground meat (if using), diced tomatoes, and jalapeños.

– Return the assembled nachos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
