Ingredients

  • For the Chicken:
      • 4 boneless, skinless chicken breasts
      • Salt and pepper to taste
      • 2 tablespoons olive oil
      • 1 teaspoon garlic powder
      • 1 teaspoon Italian seasoning
  • For the Sauce:
      • 1 tablespoon butter
      • 3 cloves garlic, minced
      • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
      • 1 cup heavy cream
      • 1 cup chicken broth
      • 1 cup grated Parmesan cheese
      • 1 teaspoon dried basil
      • 1 teaspoon dried oregano
      • 1 cup fresh spinach (optional
      • Fresh basil for garnish (optional)

Directions:

  1. Get the chicken ready:
    Add Italian seasoning, garlic powder, salt, and pepper to the chicken breasts.
  2. To sear the chicken, heat the olive oil in a big pan over medium-high heat. After adding the chicken breasts, fry them for four to five minutes on each side, or until they are cooked through and golden brown. Take out and place aside from the skillet.
  3. To make the sauce, put the butter in the same skillet. Add the minced garlic and cook for approximately 30 seconds until aromatic after it has melted.
    Cook for a further two minutes after adding the sun-dried tomatoes.
  4. Stir to mix after adding the chicken broth and heavy cream. Bring to a simmer.
  5. Add the seasoning and cheese:
  6. Add the oregano, dry basil, and Parmesan cheese and stir. Simmer for three to five minutes, or until the sauce has slightly thickened. Cook the fresh spinach until it wilts, if using.
  7. Mix:
    Spoon the sauce over the chicken and put it back in the pan. To ensure it is well heated, let it simmer for a few minutes.
  8. Serve: If preferred, garnish with fresh basil. Serve hot with thick bread, rice, or pasta.
