Directions
Get the meatloaf ready:
- Set the oven temperature to 175°C (350°F).
- Ground beef, breadcrumbs, Parmesan and cheddar cheeses, milk, chopped onion, ketchup, eggs, minced garlic, oregano, salt, and pepper should all be combined in a large mixing basin. Don’t overmix; simply mix until incorporated.
- Form the mixture into a loaf and put it on a prepared baking sheet or in a loaf pan that has been oiled. For added taste, drizzle a little ketchup over the top.
Cook the meatloaf:
- Bake for approximately one hour, or until the internal temperature reaches 160°F (70°C), in a preheated oven. Before slicing, take it out of the oven and allow it to rest for ten to fifteen minutes.
Prepare the potatoes for mashing:
- Put the peeled and cubed potatoes in a big pot while the meatloaf bakes. Add a pinch of salt and cover with cold water. Over medium-high heat, bring to a boil and simmer for 15 to 20 minutes, or until tender.
- After draining, put the potatoes back in the pot. Mash till smooth and creamy after adding the milk and butter. To taste, add salt and pepper. Keep warm by covering.
Get the gravy ready:
- Whisk the flour and beef broth together in a medium saucepan over medium heat until smooth. Bring to a simmer for 5 to 7 minutes, stirring continuously, until the gravy thickens. Add Worcestershire sauce and season to taste with salt and pepper.
Serve:
- Top each plate with a heaping mound of mashed potatoes to serve. Place the cheesy meatloaf over the potatoes after slicing it. Pour the gravy over the potatoes and meatloaf.
- If desired, garnish with fresh herbs.
Advice
- Cheese Variations: For a spicier twist, feel free to add different kinds of cheese, including mozzarella or pepper jack, to the meatloaf.
- Meatloaf leftovers can be frozen for extended storage or kept in the fridge for up to three days. Before serving, reheat in the microwave or oven.
- Add-Ins: For more taste and nutrition, you may also incorporate chopped spinach, mushrooms, or bell peppers into the meatloaf.
