These McGriddle Muffins are a fun and delicious twist on the beloved McDonald’s McGriddle breakfast sandwich—turned into a portable muffin! Imagine fluffy pancake-style muffins with a hint of maple, stuffed with savory sausage and melty cheese. The perfect balance of sweet and savory, all made in the air fryer for a fast and easy breakfast or snack.
They’re freezer-friendly, great for meal prep, and taste like a pancake, sausage, and egg sandwich in muffin form!
Ingredients (Makes 6 muffins):
For the Muffin Batter:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk (or milk + 1 tsp vinegar)
1 egg
2 tablespoons melted butter or oil
2 tablespoons maple syrup (plus extra for serving)
For the Filling:
1/2 cup cooked breakfast sausage (crumbled or in small patties)
1/2 cup shredded cheddar cheese
Optional: small cooked scrambled egg bits (chopped finely)
Air Fryer Timing & Temp:
Temp: 330°F (165°C)
Cook Time: 10–12 minutes

Silicone muffin cups or air fryer-safe ramekins
Cooking spray or oil for greasing
Instructions:
Preheat Air Fryer:
Preheat air fryer to 330°F (165°C) for about 3–5 minutes.
Make the Batter:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix buttermilk, egg, melted butter, and maple syrup.
Combine wet and dry ingredients until just mixed (don’t overmix).
Prepare Muffin Cups:
Lightly grease silicone muffin cups.
Spoon 1 tablespoon of batter into the bottom of each cup.
Add Fillings:
Add a small amount of crumbled sausage and shredded cheese into the center.
Optionally, add some chopped scrambled egg.
Cover with another spoonful of batter to fill the cup about 3/4 full.
Air Fry:
Place the muffin cups into the air fryer basket in a single layer.
Air fry at 330°F for 10–12 minutes, or until golden on top and a toothpick comes out clean.
Check around the 9-minute mark to avoid overbaking.
Cool & Serve:
Let muffins cool for 3–5 minutes before removing from molds.
Serve warm with extra maple syrup drizzle or wrap them up for an on-the-go snack!
