Meatloaf Cupcakes with Whipped Potato Topping

Ingredients
For the Meatloaf:
1 lb ground beef (or turkey/lamb for a Mediterranean twist)
1/2 cup breadcrumbs (or panko)
1/4 cup milk
1/4 cup finely chopped onion
1/4 cup grated carrot (optional)
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1/2 cup ketchup (or tomato sauce for a less sweet option)
For the Whipped Potato Topping:
2 large russet potatoes, peeled and diced
2 tbsp butter (or olive oil for a Mediterranean touch)
1/4 cup milk (or heavy cream)
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
Fresh chives or parsley, for garnish
Instructions
1. Prepare the Meatloaf:
Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
In a small bowl, mix breadcrumbs and milk and let sit for 5 minutes to soften.
In a large bowl, combine ground meat, soaked breadcrumbs, onion, carrot, Parmesan, egg, garlic, Worcestershire sauce, oregano, salt, and pepper. Mix until well combined.
Divide the meat mixture evenly into the muffin tin, pressing lightly into each cup.
Top each mini meatloaf with a small spoonful of ketchup or tomato sauce.
Bake for 18-22 minutes, or until the meat is cooked through (internal temp of 160°F/71°C for beef or 165°F/74°C for turkey).
2. Prepare the Whipped Potato Topping:
While the meatloaf bakes, boil the potatoes in salted water until fork-tender (about 15 minutes).
Drain and transfer to a large bowl. Add butter, milk, garlic powder, salt, and pepper.
Use a hand mixer or potato masher to whip the potatoes until smooth and fluffy.
3. Assemble & Serve:
Once the meatloaf cupcakes are done, let them cool for 5 minutes before removing from the tin.
Pipe or spoon the whipped potatoes on top of each cupcake.
Garnish with fresh chives or parsley and serve warm.
Tips & Variations:
For a Mediterranean twist, use ground lamb or turkey, swap Parmesan for feta, and season with cumin, oregano, and sun-dried tomatoes.
