Mediterranean Avocado & Tomato Cheese Toast
This Mediterranean-inspired toast is a perfect blend of creamy avocado, juicy tomatoes, and melted cheese on crispy toasted bread. It’s packed with healthy fats, protein, and fresh flavors, making it great for breakfast, lunch, or a light snack!

Ingredients (Serves 2)
4 slices of sourdough or whole-grain bread
1 ripe avocado, sliced
1 large tomato, sliced
½ cup shredded cheese (cheddar, mozzarella, or a Mediterranean blend)
1 tablespoon olive oil
½ teaspoon dried oregano or Italian seasoning
½ teaspoon garlic powder
Salt & black pepper, to taste
1 tablespoon fresh parsley or basil, chopped
½ teaspoon red pepper flakes (optional, for spice)
Instructions
Preheat oven to 375°F (190°C) or use an air fryer at 350°F (175°C).
Brush the bread with a light layer of olive oil on both sides and place them on a baking sheet.
Top each slice with a layer of shredded cheese and two tomato slices. Sprinkle with garlic powder, oregano, salt, and pepper.
Bake for 8-10 minutes or until the cheese is melted and slightly golden. (In an air fryer, cook for 5-7 minutes.)
Remove from the oven and add fresh avocado slices on top of each toast.
Garnish with chopped parsley or basil and a sprinkle of red pepper flakes if desired.
Serve warm and enjoy!
