Ingredients:
For the Beef Koftas:
1 lb ground beef (or lamb, for a more authentic flavor)
1 small onion, finely chopped or grated
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh cilantro, chopped (optional)
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
1/2 tsp paprika
Salt and pepper, to taste
1 tbsp olive oil (for grilling or pan-frying)
For the Bowl:
1 cup cooked quinoa or couscous
1 cup diced cucumber
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, sliced
1/4 cup feta cheese, crumbled
Fresh parsley, chopped (for garnish)
For the Tzatziki Sauce:
1/2 cup Greek yogurt
1 tbsp cucumber, grated and excess liquid squeezed out
1 tbsp lemon juice
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
1 clove garlic, minced
Salt and pepper, to taste
Instructions:
- Prepare the Koftas:
In a large bowl, combine ground beef, onion, garlic, parsley, cilantro (if using), cumin, coriander, cinnamon, paprika, salt, and pepper.
Mix everything together until well combined. You can refrigerate the mixture for 30 minutes for the flavors to meld, but it’s not necessary.
Shape the mixture into oval or cylindrical patties (about 8-10 koftas).
Heat olive oil in a skillet or grill pan over medium heat. Cook the koftas for 4-5 minutes per side until browned and cooked through. If grilling, place them on a preheated grill and cook until browned on all sides.
- Prepare the Tzatziki Sauce:
In a small bowl, combine Greek yogurt, grated cucumber, lemon juice, dill, garlic, salt, and pepper.
Stir well and refrigerate until ready to serve.
- Assemble the Bowls:
In individual bowls, layer the cooked quinoa or couscous as the base.
Top with diced cucumber, cherry tomatoes, red onion, Kalamata olives, and feta cheese.
Place the cooked koftas on top and drizzle with tzatziki sauce.
Garnish with fresh parsley and a squeeze of lemon juice, if desired.
