Ingredients:

1 pound beef strips (sirloin or ribeye), cut into bite-sized pieces

3 cups broccoli florets

2 cups cauliflower florets

1 cup corn kernels

1/4 cup extra-virgin olive oil

2 cloves garlic, minced

1 tablespoon freshly squeezed lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

1/4 cup crumbled feta cheese (optional)

Chopped fresh parsley or dill (optional)

Salad Dressing Option 1 (Ranch Dressing):

1/2 cup mayonnaise

1/2 cup sour cream, kefir, or Greek yogurt

2 tablespoons dry Ranch mix (adjust to taste)

Salad Dressing Option 2 (Without Ranch):

1/2 cup mayonnaise

1/2 cup sour cream, kefir, or Greek yogurt

2 tablespoons lemon juice

1/4 cup honey, softene

Directions:

Heat a grill or grill pan to medium-high heat before grilling the steak. Add oregano, salt, and pepper to the meat. The steak should be cooked to your preferred doneness after 3–4 minutes on each side of the grill. After five minutes of resting, finely slice the meat.

Preheat your oven to 425°F (220°C) in order to roast the veggies. On a baking sheet, combine the corn, cauliflower, and broccoli with 2 tablespoons olive oil, salt, and pepper. Vegetables should be soft and faintly browned after 15 to 20 minutes of roasting in the oven.

Garnish and serve: Top the salad with freshly cut parsley or dill, if using. Serve right away and savor.

Advice and Modifications:

If you’d like, use leftover roast chicken or grilled beef.

Use sliced jalapeños or red pepper flakes to add some heat.

Use different veggies instead, such as carrots, zucchini, or bell peppers.

For a vegetarian version, use extra veggies or protein sources, such as tofu or chickpeas, for the beef.

Prepare the ingredients in advance and put the salad together right before serving to turn it into a meal prep salad.
