Mediterranean Broccoli Cauliflower Corn and Beef Salad Recipe

This salad is a tasty and nourishing celebration of the Mediterranean diet’s emphasis on whole grains, fruits, vegetables, and lean meats, and it’s ideal for a quick and simple lunch, dinner, or meal prep.
Ingredients:
1 pound beef strips (sirloin or ribeye), cut into bite-sized pieces
3 cups broccoli florets
2 cups cauliflower florets
1 cup corn kernels
1/4 cup extra-virgin olive oil
2 cloves garlic, minced
1 tablespoon freshly squeezed lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
1/4 cup crumbled feta cheese (optional)
Chopped fresh parsley or dill (optional)
1/2 cup mayonnaise

2 tablespoons dry Ranch mix (adjust to taste)

Directions:
Heat a grill or grill pan to medium-high heat before grilling the steak. Add oregano, salt, and pepper to the meat. The steak should be cooked to your preferred doneness after 3–4 minutes on each side of the grill. After five minutes of resting, finely slice the meat.
Preheat your oven to 425°F (220°C) in order to roast the veggies. On a baking sheet, combine the corn, cauliflower, and broccoli with 2 tablespoons olive oil, salt, and pepper. Vegetables should be soft and faintly browned after 15 to 20 minutes of roasting in the oven.
Get the dressing ready: Combine the lemon juice, garlic, salt, pepper, and the remaining 2 tablespoons of olive oil in a small bowl.
Put the salad together: Put the roasted veggies, sliced meat, and crumbled feta cheese (if using) in a big bowl. Over the salad, drizzle the dressing and toss to mix.
Garnish and serve: Top the salad with freshly cut parsley or dill, if using. Serve right away and savor.
