Ingredients
For the Chicken Ricotta Meatballs:
1 lb ground chicken (or turkey/lamb)
1/2 cup ricotta cheese

Instructions
1. Prepare the Meatballs:
In a large bowl, mix ground chicken, ricotta, feta, onion, garlic, breadcrumbs, egg, olive oil, oregano, cumin, salt, pepper, paprika, and parsley/mint until well combined.
Roll into 1-inch meatballs (makes about 18-20).
Heat 1 tbsp olive oil in a large skillet over medium heat.
Sear meatballs for 3-4 minutes per side, until golden brown. Remove from the skillet and set aside.
2. Make the Garlic-Lemon Yogurt Sauce:
In a bowl, whisk together Greek yogurt, lemon juice, garlic, olive oil, salt, pepper, cumin, and fresh dill/parsley until smooth.
3. Simmer the Meatballs in the Sauce:
Lower heat to medium-low, add the yogurt sauce to the skillet, and warm it gently (don’t boil!).
Return the meatballs to the pan, spooning the sauce over them. Cover and let simmer for 5 minutes until heated through.
