Ingredients
For the Chicken:
4 boneless, skinless chicken breasts (or thighs)
½ tsp salt
½ tsp black pepper
½ tsp dried oregano
½ tsp paprika
2 tbsp olive oil
For the Sauce:
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
1 cup marinated artichoke hearts, drained and quartered
2 tbsp capers, drained
½ cup dry white wine (or chicken broth)
½ cup chicken broth
1 tbsp lemon juice
½ tsp red pepper flakes (optional, for heat)
2 tbsp butter (or more olive oil)
¼ cup fresh parsley, chopped (for garnish)
Instructions
Prepare the Chicken
Season the chicken with salt, black pepper, oregano, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for 4-5 minutes per side, until golden brown. Remove from the skillet and set aside.
Make the Mediterranean Sauce
In the same skillet, add garlic and cook for 30 seconds until fragrant.
Stir in sun-dried tomatoes, artichoke hearts, and capers, cooking for another 1-2 minutes.
Pour in white wine and chicken broth, scraping the bottom of the pan to deglaze.
Add lemon juice and red pepper flakes (if using). Let simmer for 3-4 minutes until slightly reduced.
Simmer & Finish
Return the chicken to the skillet, spooning some of the sauce over it. Cover and simmer for 8-10 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F / 75°C).
Stir in butter for a silky finish.
Serve & Garnish
Sprinkle with fresh parsley and serve hot. Pair with rice, quinoa, pasta, or crusty bread.
