Mediterranean Grilled Chicken Bites with Garlic Yogurt Sauce

For the Chicken
- 1 lb chicken breast, cubed
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp garlic powder
- ¼ tsp cumin
- Zest + juice of ½ lemon
- Salt & pepper to taste
- Optional: pinch of red pepper flakes
For the Garlic Yogurt Sauce
- ½ cup Greek yogurt
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp parsley, chopped
🔥 Instructions
1. Marinate the Chicken
- Add cubed chicken to a bowl.
- Pour in olive oil, paprika, oregano, garlic powder, cumin, lemon zest, lemon juice, salt, pepper, and optional red pepper flakes.
- Toss well to coat all pieces evenly.
- Cover and marinate for at least 20 minutes (or up to 4 hours for deeper flavor).
2. Make the Garlic Yogurt Sauce
- In a small bowl, whisk together Greek yogurt, olive oil, minced garlic, lemon juice, and chopped parsley.
- Taste and adjust seasoning — add a pinch of salt or extra lemon if needed.
- Refrigerate until ready to serve.
3. Cook the Chicken
Grill method:
- Heat grill or grill pan over medium-high heat.
- Add chicken pieces and cook 8–10 minutes, turning until charred and fully cooked.
Stovetop method:
- Heat a skillet with a little olive oil.
- Add chicken cubes and cook on all sides until golden and cooked through (internal temp 165°F).
4. Serve
- Arrange cooked chicken bites on a plate or tray.
- Drizzle generously with the garlic yogurt sauce.
- Sprinkle extra parsley on top for color.
- Serve warm.
