Mediterranean Moonlight Blueberry Clusters

Mediterranean Moonlight Blueberry Clusters
Makes ~12 clusters

Ingredients

  • 2 cups fresh blueberries (washed and fully dried)
  • ¾ cup thick Greek yogurt (full-fat or low-fat)
  • 2 tbsp raw honey or maple syrup
  • ½ tsp vanilla extract
  • Zest of ½ lemon or orange
  • Pinch of sea salt
  • ½ cup dark chocolate chips (70% cocoa)
  • 1 tsp coconut oil or olive oil (for melting chocolate)
  • Optional toppings: chopped pistachios, crushed almonds, sesame seeds

Instructions

1. Prepare the yogurt coating
In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, citrus zest, and a small pinch of sea salt. Stir until smooth and creamy.

2. Coat the blueberries
Add the blueberries to the bowl and gently fold them into the yogurt mixture until they are evenly coated.

3. Form the clusters
Line a tray or plate with parchment paper. Spoon small mounds of the coated blueberries onto the tray, about 2 tablespoons per cluster.

4. Freeze until firm
Place the tray in the freezer for 1½–2 hours, or until the clusters are fully set and hold their shape.

5. Prepare the chocolate drizzle
Melt the dark chocolate chips together with the coconut or olive oil until smooth.

6. Add the chocolate
Drizzle the melted chocolate over the frozen clusters, or dip them lightly for a thicker coating.

7. Final set
If using nuts or sesame seeds, sprinkle them on top before the chocolate hardens. Return the clusters to the freezer for another 15–20 minutes.

8. Serve and store
Enjoy straight from the freezer, or let them sit for 1–2 minutes for a softer bite. Store leftovers in an airtight container in the freezer for up to 2 weeks.
