Ingredients
For the Chicken:

1 zucchini, sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped

1 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano
For Garnish:
1/4 cup feta cheese, crumbled
Fresh parsley, chopped
Instructions
Marinate the Chicken (5 minutes active, 30 minutes marinating)
In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, paprika, cumin, salt, and pepper.
Coat the chicken with the marinade and let it rest for at least 30 minutes in the fridge for deeper flavor. (Skip this step if in a hurry.)
Prepare the Vegetables (5 minutes)
Preheat oven to 400°F (200°C).
On a large sheet pan, toss zucchini, bell peppers, red onion, cherry tomatoes, and olives with olive oil, salt, black pepper, and oregano. Spread evenly.
Add Chicken to the Sheet Pan (1 minute)
Place the marinated chicken on top of the vegetables.
Bake (25-30 minutes)
