 Ingredients

For the Chicken & Orzo:

2 chicken breasts, diced (or boneless thighs)

1 ½ cups orzo pasta

1 ½ cups broccoli florets, chopped

3 tbsp extra virgin olive oil

3 cloves garlic, minced

½ tsp dried oregano

½ tsp dried thyme

½ tsp paprika

½ tsp salt (or to taste)

½ tsp black pepper

½ tsp red pepper flakes (optional for heat)

½ cup crumbled feta cheese

¼ cup grated Parmesan cheese

2 ½ cups low-sodium chicken broth

1 tbsp lemon juice

1 tsp lemon zest

1 tbsp chopped fresh parsley (for garnish)

 Instructions

 Cook the Chicken

Heat 2 tbsp olive oil in a large skillet over medium heat.

Add diced chicken, season with salt, pepper, oregano, thyme, and paprika, and cook for 5–6 minutes until golden brown.

Remove chicken from the pan and set aside.

 Sauté the Garlic & Orzo

In the same pan, add 1 tbsp olive oil and minced garlic. Sauté for 30 seconds until fragrant.

Stir in the orzo pasta and toast for 1–2 minutes, stirring frequently, until slightly golden.

 Simmer with Broccoli

Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 7 minutes.

Stir in the chopped broccoli and continue cooking uncovered for 3–5 more minutes, until the orzo is tender and the broth is absorbed.

 Add Chicken, Cheese & Lemon

Return the cooked chicken to the pan.

Stir in feta, Parmesan, lemon zest, and lemon juice. Mix well until everything is combined and creamy.

 Serve & Garnish

Remove from heat and sprinkle with fresh parsley.

Serve warm with extra feta or Parmesan on top. Enjoy!
