Mediterranean-Style Cheesy Mashed Potato Puffs
These Mediterranean-inspired mashed potato puffs are crispy on the outside, soft and cheesy on the inside, and packed with bold flavors! They make a perfect appetizer, side dish, or snack.
Ingredients
2 cups mashed potatoes (preferably cold leftovers for better texture)
2 eggs, beaten
½ cup crumbled feta cheese (or shredded halloumi)
¼ cup grated Parmesan
¼ cup sun-dried tomatoes, finely chopped
2 tbsp Kalamata olives, finely chopped
2 tbsp fresh parsley, chopped
1 tsp dried oregano
½ tsp garlic powder
Salt & pepper, to taste
½ cup panko breadcrumbs (for a crispy texture)
Olive oil spray or brushing (for baking)
Instructions
Preheat & Prep:
Preheat oven to 375°F (190°C).
Grease a mini muffin tin or line a baking sheet with parchment paper.
Mix the Ingredients:
In a large bowl, combine mashed potatoes, eggs, feta, Parmesan, sun-dried tomatoes, olives, parsley, oregano, garlic powder, salt, and pepper.
Stir until well mixed.
Shape the Puffs:
Scoop about 1 tablespoon of the mixture and roll into small balls.
Coat each ball lightly with panko breadcrumbs for extra crispiness.
Bake or Air Fry:
Oven: Place in the mini muffin tin or on a baking sheet, brush with olive oil, and bake for 20-25 minutes, until golden and crispy.
Air Fryer: Place in a single layer, spray with olive oil, and air fry at 375°F (190°C) for 12-15 minutes, shaking halfway.
Serve & Enjoy:
Garnish with extra parsley and a drizzle of tzatziki or garlic yogurt sauce.
