Mediterranean-Style Crispy Cheese Chips
A crunchy, savory snack infused with Mediterranean flavors, these crispy cheese chips are made with feta and ricotta, seasoned with oregano, za’atar, and garlic, and air-fried or baked for the perfect crunch!

Ingredients:
Cheese Base:
½ cup crumbled feta cheese
½ cup ricotta cheese
½ cup grated Parmesan or Pecorino Romano (for crispiness)
1 large egg white (to help bind the cheese)
Seasonings:
½ tsp dried oregano
½ tsp za’atar (or thyme)
½ tsp smoked paprika
¼ tsp garlic powder
¼ tsp black pepper
For Serving:
Tzatziki, hummus, or baba ganoush (optional)
Fresh parsley for garnish
Instructions:
Preheat & Prep
Preheat your air fryer to 350°F (175°C) or oven to 375°F (190°C).
Line a baking sheet with parchment paper if using an oven.
Mix the Cheese Batter
In a bowl, mash together feta, ricotta, Parmesan, egg white, and seasonings until you get a thick paste.
If too crumbly, add a little olive oil (1 tsp) to help bind.
Shape the Chips
Use a teaspoon to scoop small portions and place them on the air fryer tray or baking sheet.
Flatten each portion into thin rounds (¼ inch thick) for extra crispiness.
Bake or Air Fry
Air Fryer: 350°F (175°C) for 8–10 minutes, until crispy and golden brown.
Oven: 375°F (190°C) for 10–12 minutes, flipping halfway through.
Cool & Serve
Let them cool for 5 minutes (they crisp up more as they cool!).
Serve with tzatziki, hummus, or baba ganoush for dipping.
Tips & Tricks:
Thinner Chips = Crispier Texture – Spread them out for better crunch!
Use Pecorino Romano – It crisps up better than Parmesan.
Add a Drizzle of Olive Oil – For that Mediterranean richness.
Pair with a Dip – Tzatziki or a lemon-garlic yogurt sauce works great.
