Ingredients (Serves 2-4)

100g glass noodles (also called cellophane noodles or bean thread noodles)

½ cup cherry tomatoes, halved

½ cucumber, thinly sliced

¼ red onion, thinly sliced

¼ cup Kalamata olives, sliced

¼ cup crumbled feta cheese

¼ cup chopped fresh parsley

¼ cup chopped fresh mint

¼ cup chickpeas (optional for protein)

For the Dressing:

3 tbsp extra virgin olive oil

2 tbsp fresh lemon juice

1 tbsp white wine vinegar or apple cider vinegar

1 tsp honey or maple syrup

1 garlic clove, minced

Instructions

Cook the Glass Noodles:

Soak the noodles in hot water for 5 minutes or until soft.

Drain and rinse under cold water.

Cut the noodles into smaller pieces with kitchen scissors (optional for easier eating).

Prepare the Dressing:

In a bowl, whisk together olive oil, lemon juice, vinegar, honey, garlic, oregano, cumin, salt, and black pepper.
