Mexican Lasagna (Air Fryer Style)
A fiesta of flavors in every bite! Layers of tortillas, spiced meat, beans, and cheese come together in this irresistible Mexican-style lasagna—crispy-topped and gooey in the middle thanks to the air fryer

Ingredients
For the Filling:
1 tbsp olive oil
1 lb (450g) ground beef or ground turkey
½ cup onion (finely chopped)
2 cloves garlic (minced)
1 packet taco seasoning (or homemade mix: 1 tsp cumin, 1 tsp chili powder, ½ tsp paprika, ½ tsp oregano, ½ tsp salt)
½ cup black beans or kidney beans (drained)
½ cup corn (optional)
¾ cup chunky salsa
For Assembly:
4–5 small flour tortillas (or corn, 6-inch rounds)
1½ cups shredded Mexican blend cheese
¼ cup sour cream (optional, for layering)
Jalapeños or green onions (optional)
Garnish:
Chopped cilantro
Sour cream
Avocado or guacamole
Extra salsa
Instructions
Cook the Filling:
Heat oil in a skillet over medium heat.
Add chopped onion and cook 2–3 minutes until soft.
Add ground beef and cook until browned (about 5–6 minutes). Drain excess grease.
Stir in garlic, taco seasoning, beans, corn (if using), and salsa. Simmer for 3–4 minutes. Set aside.
Assemble the Lasagna:
Lightly grease an air fryer-safe round baking dish (6 to 7 inches wide).
Place a tortilla at the bottom of the dish.
Add a spoonful of meat mixture, a sprinkle of cheese, and a bit of sour cream (if using).
Repeat layers: tortilla → meat → cheese → sour cream, until ingredients are used up.
Finish with a tortilla topped with lots of cheese and jalapeños (if using).
Preheat Air Fryer:
Preheat air fryer to 170°C (340°F) for 3 minutes.
Air Fry the Lasagna:
Place the dish in the air fryer basket.
Cook at 170°C (340°F) for 15–18 minutes, or until:
Cheese is bubbly and golden.
The middle is hot and melty.
Tip: Cover with foil halfway through if the cheese browns too quickly.
Cool & Serve:
Let sit for 5 minutes before slicing.
Top with fresh cilantro, sour cream, and avocado.
Tips:
Add sautéed peppers or zucchini for extra veg.
Swap beef for shredded rotisserie chicken or veggie crumbles.
For extra spice, use hot salsa or pepper jack cheese.
