Unlike the classic shrimp cocktail served with a dipping sauce, this Mexican version is tossed in a savory, tangy tomato-based mixture loaded with fresh vegetables, lime juice, cilantro, and avocado. Ingredients
⅓ cup Spanish onion, finely chopped
¼ cup freshly squeezed lime juice
1 pound cooked medium shrimp, chilled, peeled, deveined, tails removed
2 Roma (plum) tomatoes, chopped
1 cucumber, finely chopped
1 stalk celery, finely chopped
1 jalapeño pepper, seeded and finely chopped
2 teaspoons salt (adjust to taste)
2 teaspoons ground black pepper
1½ cups chilled tomato and clam juice cocktail
1 cup chilled ketchup
1 bunch fresh cilantro, stems discarded and leaves chopped
2 tablespoons hot pepper sauce (such as Tabasco or Valentina)
2 ripe avocados, peeled, pitted, and chopped
Instructions
1. Prepare the Base
In a large mixing bowl, combine the chopped Spanish onion and fresh lime juice. Let this sit for about 5 minutes to slightly mellow the onion and enhance the citrus flavor.
2. Add the Shrimp and Vegetables
Add the chilled cooked shrimp to the bowl, followed by the chopped tomatoes, cucumber, celery, and jalapeño. Gently toss to evenly distribute all the ingredients.
3. Season the Mixture
Sprinkle in the salt and black pepper. Stir carefully to coat the shrimp and vegetables without breaking them apart.
4. Create the Cocktail Sauce
Pour in the chilled tomato and clam juice cocktail and the ketchup. Add the hot pepper sauce and chopped cilantro. Mix gently until everything is well combined and the sauce is evenly distributed. Taste and adjust seasoning or heat if needed.
5. Chill for Best Flavor
Cover the bowl and refrigerate for at least 30 minutes. Chilling allows the flavors to meld and enhances the freshness of the cocktail.
6. Add Avocado Before Serving
Just before serving, gently fold in the chopped avocado to keep it fresh and prevent browning.
