Mini buns with chicken stuffing
INGREDIENTS:
– FOR THE DOUGH:
- 300 g of flour
- 200 g of semolina flour
- 8 g of dry brewer’s yeast
- 1 tbsp of sugar
- 2 tbsp of olive oil
- 1 tbsp of milk powder (optional)
- 300 ml of water
- 1 tsp of salt
– FOR THE STUFFING:
- 450-500 g of chicken breast
- 2 minced garlic cloves
- 1 tsp of salt
- 1 tsp of spices
- 1/2 tsp of pepper
- Cumin
- Ginger
- 50 ml of olive oil
- Tomatoes
- Olives
- Salad
- Corn
DIRECTIONS:
1. Dissolve yeast into a little bit of water.
2. Then add sugar, oil, milk powder, semolina flour and flour.
3. Knead and stir in salt and water, a little bit at a time.
4. Cover the dough with some plastic wrap and let rise for 40-60 minutes.
5. Now start preparing the stuffing: dice the chicken and season with salt, pepper, spices, olive pil and garlic.
6. Flatten the dough with a rolling pin and cut into some disks.
7. Cook them in a hot pan turning them until they’re golden on both sides.
8. Let cool.
9. Meanwhile cook the chicken you made before in a hot pan with no fats added.
10. Cut the buns in half and stuff them with a parsley mayonnaise, salad, tomatoes, corn, olives and chicken.
