My niece emailed me a screenshot of these gorgeous Easter egg cheesecakes on social media and begged me to create them. She and her parents had made a matching birthday cake, but now she keeps messaging me that these cheesecakes are needed to finish the theme. How could I refuse? Ingredients:
For crust:
- -1 cup graham cracker crumbs
- Add 2 tablespoons granulated sugar
- and 4 tablespoons melted unsalted butter
. For cheesecake filling
- : 2 softened (8-oz) cream cheese packets
- – 1/3 cup granulated sugar
- – 1 tsp vanilla
- – 1 big egg
For topping:
- 1/2 cup melted dark chocolate
- – Mini sweetscovered chocolate eggs
- – Optional whipped cream
Instructions
: To make the crust, preheat the oven to 325°F (160°C). Use cupcake liners to line a muffin tray. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Put 1 spoonful of mixture in each liner. Bake 5 minutes, then cool.
Step 2: Prepare the filling by beating cream cheese and sugar in a bowl until creamy. Add egg and vanilla extract and stir.- Fill each crust liner 3/4 full with filling.
In step 3, bake cheesecakes for 15-18 minutes or until centers set. After cooling to ambient temperature, refrigerate for 2 hours.
Step 4: Decorate cheesecakes by spooning melted dark chocolate on top after chilling. If desired, add small candy eggs and whipped cream.
5. Serve: – Enjoy holiday sweets with family and friends by removing the liners.
