 Ingredients

For the Meatloaf:

1 lb ground beef (or turkey/chicken for a leaner option)

½ cup breadcrumbs (plain or Italian-style)

1 egg

¼ cup milk

½ small onion, finely diced

2 cloves garlic, minced

¼ cup grated feta cheese (optional, for extra flavor)

2 tbsp ketchup

1 tbsp Worcestershire sauce

1 tsp salt

½ tsp black pepper

½ tsp dried oregano

½ tsp dried parsley

For the Glaze:

¼ cup ketchup

1 tbsp brown sugar

1 tsp Dijon mustard (optional, for a tangy kick)

 Instructions

 Preheat & Prep:

Preheat oven to 375°F (190°C).

Grease a 12-cup muffin tin or line with muffin liners.

 Make the Meatloaf Mixture:

In a large bowl, mix together ground beef, breadcrumbs, egg, milk, onion, garlic, Parmesan (if using), ketchup, Worcestershire sauce, salt, pepper, oregano, and parsley.

Stir until well combined, but don’t overmix.

Shape & Fill Muffin Tin:

Divide the mixture evenly among the 12 muffin cups, pressing gently to shape.

 Make & Add the Glaze:

In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard.

Spoon or brush the glaze over each mini meatloaf.

 Bake:

Bake for 20–25 minutes, or until the meatloaf muffins reach an internal temperature of 160°F (71°C) for beef or 165°F (74°C) for turkey/chicken.
