4 large bell peppers (red, green, or yellow)
1 lb ground beef
1/2 cup cooked beef, crumbled
1/2 cup BBQ sauce

1/4 cup diced mushrooms

In a skillet over medium heat, cook the ground beef until browned. Add the diced mushrooms and onions, cooking for 2-3 minutes until softened. Stir in the BBQ sauce, beef, and pickles. Season with salt and pepper.
Stuff each bell pepper with the beef mixture, filling them generously, and sprinkle shredded cheddar cheese on top.
Place the stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes, or until the peppers are tender and the cheese is melted.
Remove from the oven, garnish with fresh parsley, and serve hot.
Tips & Tricks
Choose the Right Peppers: Look for large, firm bell peppers with flat bottoms so they stand upright while baking.
Pre-Cook the Peppers: For softer peppers, blanch them in boiling water for 3-5 minutes before stuffing.
Enhance the Flavor: Add a splash of Worcestershire sauce to the beef mixture for extra umami depth.
Cheese Variations: Try using smoked cheddar, pepper jack, or gouda for a different flavor twist.
Make it Low-Carb: Swap BBQ sauce for a sugar-free version and use lean ground beef or turkey.
Meal Prep Friendly: These stuffed peppers store well in the fridge for up to 4 days and can be frozen for longer storage.
