Two wonderfully toasted slices of bread are sandwiched by melted cheese, caramelized onions, and sautéed mushrooms in these flavorful melts. Ingredients:

For the Mushroom Filling:

2 tbsp olive oil

1 small onion, thinly sliced

3 cups mushrooms (white or cremini), sliced

2 garlic cloves, minced

1 tsp thyme leaves (fresh or dried)

Salt and pepper to taste

2 tbsp balsamic vinegar (optional, for extra depth of flavor)

1 tbsp fresh parsley, chopped (optional, for garnish)

For the Sandwich:

4 slices of your favorite bread (sourdough, whole wheat, or white)

4 slices of cheese (Swiss, provolone, or cheddar work well)

2 tbsp unsalted butter (for grilling)

Instructions:

1. Sauté the Mushrooms:

Heat the olive oil in a large skillet over medium heat. Once melted, add the sliced onions and cook for 3-4 minutes, until softened.

Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, until they release their moisture and become golden brown. Stir occasionally to ensure even cooking.

Add the minced garlic and thyme, then cook for another minute until fragrant.

Season with salt and pepper to taste. If you’re using balsamic vinegar, add it now and cook for 1-2 more minutes to allow it to reduce slightly.

Remove the skillet from the heat and set the mushroom mixture aside.

2. Prepare the Sandwiches:

Butter one side of each slice of bread. These will be the outer sides that get toasted.

Place a slice of cheese on the unbuttered side of two slices of bread.

Spoon a generous amount of the sautéed mushroom mixture on top of the cheese, then top with another slice of cheese (optional for extra melty goodness).

Place the remaining slices of bread (buttered side out) on top of the filled slices to form sandwiches.

3. Grill the Sandwiches:

Heat a skillet or griddle over medium-low heat. Once hot, place the sandwiches in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy, and the cheese has melted inside.

Press down slightly with a spatula for an even toast.

4. Serve:

Once the sandwiches are grilled to perfection, remove them from the skillet and let them cool for a minute before slicing them in half.

Garnish with fresh parsley if desired, and serve immediately.
