Mushroom-Stuffed Chicken Breasts Recipe
Ingredients
For the Chicken:
- 2 large chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt

Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1 pound white button mushrooms, sliced
1/2 cup chopped onion
1 clove garlic, minced
4 cup butter
1/4 cup all-purpose flour
1 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan chees
Fresh parsley, chopped, for garnish
Instructions:
Pound the chicken:
Place each chicken breast between two sheets of plastic wrap and gently pound to an even thickness. Season with salt and pepper.
Sauté the mushrooms:
Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 5 minutes. Add onion and garlic and cook until softened, about 5 minutes more.
Make the sauce:
In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in chicken broth and heavy cream until smooth. Bring to a simmer, stirring constantly, until thickened. Stir in Parmesan cheese and season with salt and pepper to taste.
Stuff the chicken:
Spoon the mushroom mixture evenly over the chicken breasts. Top with the sauce.
Bake:
Preheat oven to 375°F (190°C). Bake the stuffed chicken breasts for 25-30 minutes, or until cooked through.
Serve:
Garnish with chopped parsley and serve immediately.
Tips:
You can use any type of mushrooms you like.
If you don’t have heavy cream, you can use milk or half-and-half.
For a richer flavor, use chicken stock instead of water.
If you want to make this dish ahead of time, you can assemble the chicken breasts and sauce and refrigerate them overnight. Bake as directed.
