No-Bake Cheesecake Recipe

Ingredients:

Set A:

  • 1 ¼ cups crushed graham crackers
  • ⅓ cup melted butter
  • ⅓ cup sugar

Set B:

  • ¼ cup hot water
  • 3 tablespoons gelatine

Set C:

  • 2 bars cream cheese
  • 1 cup all-purpose cream
  • 1 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon salt

Set D:

  • 1 ½ cups mixed berries
  • ¼ cup sugar
  • 2 tablespoons cornstarch

Instructions:

Set A (Crust):

In a bowl, combine crushed graham crackers, melted butter, and ⅓ cup sugar. Mix well.
Press the mixture into the bottom of a cheesecake pan or a springform pan to create the crust. Chill in the fridge while you prepare the filling.

Set B (Gelatine Mixture):

In a separate bowl, mix ¼ cup hot water and 3 tablespoons of gelatine. Stir until dissolved.

Set C (Cheesecake Filling):

  • In a large bowl, beat 2 bars of cream cheese until creamy.
  • Add 1 cup of all-purpose cream, 1 1/4 cup sugar, 1 tablespoon lemon juice, and 1 teaspoon salt. Mix until smooth.
  • Gradually pour in the gelatine mixture (from Set B) and mix well.

Set D (Mixed Berry Topping):

  • In a saucepan, combine 1 ½ cups mixed berries, ¼ cup sugar, and 2 tablespoons cornstarch.
  • Cook over medium heat until the mixture thickens and the berries break down. Remove from heat and let it cool.

Assembly:

  1. Take the chilled crust from Set A.
  2. Pour the cheesecake filling (from Set C) over the crust and spread it evenly.
  3. Refrigerate the cheesecake for a few hours or until it sets.
  4. Once the cheesecake has set, spread the cooled mixed berry topping (from Set D) over the top.
  5. Chill for a bit longer to let the topping set.
  6. Slice, serve, and enjoy your delicious No-Bake Cheesecake!
