No-Bake Strawberry Peach Cake Recipe
Ingredients:
- 280g biscuits (10 oz)
- 120g butter (4.3 ounces)
- 200g strawberries (7 oz)
- 200g canned peaches in syrup (7 oz)
- 300g cream cheese (10.5 oz)
- 200ml heavy cream (33%, 6.7 fl oz)
- 200ml milk (6.7 fl oz)
- 100g sugar (3.5 ounces)
- 10g agar agar (0.35 oz)
- Coconut flakes (for garnish)
Instructions:
- Crush half of the biscuits (140g) into fine crumbs. You can use a food processor or place them in a zip-lock bag and crush with a rolling pin.
- Melt 120g of butter. Mix the melted butter with the crushed biscuits until well combined.
- Press the biscuit mixture into the bottom of a 20 x 15 cm (8 x 6 inches) cake mold to create the crust.
- Slice 200g of strawberries and 200g of canned peaches into small pieces.
- In a mixing bowl, combine 300g of cream cheese, 200ml of heavy cream, 200ml of milk, and 100g of sugar. Mix until smooth.
- In a small saucepan, add 10g of agar agar and bring it to a boil over medium heat while stirring constantly. Once it boils, continue cooking for 2 more minutes.
- Pour the agar agar mixture into the cream cheese mixture and mix well.
- Add the sliced strawberries and peaches to the cream cheese mixture. Mix to distribute the fruits evenly.
- Pour the cream cheese mixture over the biscuit crust in the cake mold.
- Crush the remaining 140g of biscuits into crumbs and sprinkle them over the top of the cake.
- Garnish with coconut flakes.
- Refrigerate the cake for at least 2 hours to set.
