Nutty Date Energy Bars: A Wholesome Snack for All Ages
It might be difficult to find a snack that is both nourishing and filling in today’s hectic environment. Natural, unprocessed meals are becoming popular as a way for individuals to feed their bodies all day long. The Nutty Date Energy Bars are the ideal combination of crunchy mixed nuts and sweet, chewy dates, held together by the richness of ghee or butter. In addition to being tasty, these bars are loaded with vital nutrients that provide you sustained energy. These bars will quickly become a kitchen mainstay, whether you’re searching for a nutritious treat, a quick breakfast, or a lunchtime pick-me-up.
Ingredients:
- 1 cup Medjool dates, pitted and finely ground
- ¾ cup mixed nuts, chopped (a combination of walnuts, cashews, almonds, and pistachios works best)
- 1 tablespoon butter or ghee (clarified butter)
- A pinch of salt (optional, but enhances the flavor)
Instructions:
Prepare the Dates: If the Medjool dates haven’t been pitted before, start by doing so.
Grind the dates in a food processor until they form a thick, sticky paste. This will serve as your bars’ natural binder and sweetness.
Prepare the Nuts: Roughly cut the mixed nuts into tiny bits. They should be big enough to provide a nice crunch, but yet little enough to blend in well with the dates.
To improve the taste, toast the nuts in a dry skillet over medium heat for a few minutes, being careful not to burn them.
Mix the Ingredients: Put the chopped nuts and ground dates in a medium-sized bowl.
In a small saucepan over low heat, melt the butter or ghee and pour it over the combination of dates and nuts.
Mix everything well with a spatula or your hands until the butter coats the dates and nuts evenly and the mixture begins to come together.
Form the Bars:
Use parchment paper to line a small baking dish or tray.
Using your hands or the back of a spoon, firmly press the date and nut mixture into the dish to form a uniform layer.
To give the mixture time to solidify, place the dish in the refrigerator for at least one hour.
Cut and Store: Take the mixture out of the fridge and remove the parchment paper from the dish when it has set.
Slice the mixture into the appropriate size bars or squares.
The bars can remain fresh for up to two weeks if you store them in the refrigerator in an airtight container.
