¼ cup onion, finely chopped

¼ cup bell pepper, finely chopped

1 green chili, finely chopped (optional, for heat)

2 tbsp fresh coriander or parsley, chopped

Optional fillings: cooked chicken, or mushrooms

Instructions

Prepare the Egg Mixture

In a bowl, whisk eggs, milk, salt, and pepper until light and frothy.

Stir in onion, tomato, bell pepper, chili, and coriander.

Cook the Omelette

Heat butter or oil in a nonstick pan over medium heat.

Pour in the egg mixture and spread evenly.

Cook until the bottom is set (2–3 minutes), then flip carefully and cook another 1–2 minutes.

Place cheese slices on top and let them melt slightly.

Toast the Bread
