Escape to a tropical paradise with this vibrant and flavorful One Pan Coconut-Lime Chicken recipe. Inspired by the exotic islands of Southeast Asia, this dish combines the juiciest chicken breast, creamy coconut milk, and zesty lime juice, all cooked to perfection in just one pan.

Ingredients:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 tablespoon garlic, minced

1 tablespoon fresh ginger, grated

1 can (14 oz) coconut milk

Juice and zest of 1 lime

1 tablespoon soy sauce

1 teaspoon honey

1/2 teaspoon chili flakes (optional)

2 tablespoons fresh cilantro, chopped (for garnish)

1 tablespoon toasted coconut flakes (for garnish)

Directions:

Preheat the oven to 375°F (190°C).

Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper. Once the oil is hot, add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown.

Remove the chicken from the skillet and set aside. In the same skillet, add garlic and ginger, cooking for 1-2 minutes until fragrant.

Pour in the coconut milk, lime juice, lime zest, soy sauce, honey, and chili flakes (if using). Stir to combine.

Return the chicken to the skillet, spooning some of the coconut sauce over the chicken.

Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Remove the skillet from the oven, garnish with fresh cilantro and toasted coconut flakes. Serve the chicken with extra sauce from the pan.
