One-Pan Garlic Herb Salmon & Veggies

A bright, flavor-packed dinner combining tender salmon, perfectly roasted veggies, and a tangy lemon zest—all cooked together on a single pan for minimal cleanup.

Ingredients

4 fillets of fresh salmon (approximately 6 ounces each, skin on or off)

1 pound of baby potatoes, sliced into halves

A heaping cup of ripe cherry tomatoes

½ pound of crisp green beans, ends trimmed

3 tablespoons of extra-virgin olive oil

2 plump garlic cloves, finely minced

1 teaspoon of sweet paprika

½ teaspoon of earthy dried thyme

½ teaspoon of aromatic dried rosemary

A pinch of salt, plus freshly cracked black pepper to your taste

1 juicy lemon, thinly sliced

A handful of fresh parsley, finely chopped, for garnish

Instructions

1. Get the Oven Ready

Set your oven to preheat at 400°F (200°C). For an easy cleanup, line a large baking tray with parchment paper or foil.

2. Prepare the Flavorful Herb Mixture

In a small mixing bowl, combine the olive oil, minced garlic, paprika, thyme, rosemary, salt, and a dash of black pepper. Stir thoroughly and set aside.

3. Roast the Potatoes First

Place the halved baby potatoes onto the prepared tray. Drizzle one-third of the herb-infused oil over them, tossing gently for even coating. Spread them in a single layer and roast for 15 minutes.

4. Add Salmon and Veggies

Remove the tray from the oven and slide the potatoes to one side. Lay the salmon fillets, skin-side down, onto the tray. Scatter the trimmed green beans and cherry tomatoes around the salmon and potatoes.

5. Coat Everything in Herb Oil

Spoon the remaining garlic herb mixture over the salmon and vegetables, ensuring an even coating. Top each salmon fillet with a lemon slice for added zing.

6. Finish Roasting

Return the tray to the oven and bake for another 12–15 minutes, or until the salmon is flaky and fully cooked, and the vegetables are tender and golden.
