Orange and Vanilla Yogurt Doughnuts Recipe

Ingredients:

    • 1 egg
    • Pinch of salt

    • 2 tablespoons of sugar
    • Zest of one orange
    • 70 ml of vegetable oil

    • 125 g of vanilla yogurt
    • Approximately 400 g of all-purpose flour
    • 1/2 teaspoon of baking powder

    • Apricot jam (optional, for filling)
    • Coconut flour (for dusting)
    • Additional vegetable oil (for frying)

Instructions:

  1. Prepare the Dough:
      • In a large mixing bowl, beat the egg with a pinch of salt.
      • Add 2 tablespoons of sugar and the zest of one orange. Mix well.
      • Pour in 70 ml of vegetable oil and 125 g of vanilla yogurt. Stir until well combined.

    • Gradually add approximately 400 g of all-purpose flour and 1/2 teaspoon of baking powder. Mix until a dough forms. The dough should be soft but not sticky. If necessary, add more flour to achieve the right consistency.
  2. Shape the Doughnuts:
      • Lightly flour a clean work surface and roll out the dough to about 1/2-inch thickness.

    • Use a doughnut cutter or two different-sized round cutters to cut out doughnut shapes. If you don’t have a doughnut cutter, you can use a glass or cookie cutter to cut out circles and a smaller cutter or bottle cap to cut out the center holes.
  3. Fry the Doughnuts:
      • Heat vegetable oil in a deep frying pan or pot over medium heat. The oil should be about 1 inch deep.

      • Once the oil is hot (around 350°F or 175°C), carefully place the doughnuts into the oil, a few at a time, making sure not to overcrowd the pan.
      • Fry the doughnuts for about 2-3 minutes on each side, or until golden brown.
      • Use a slotted spoon to remove the doughnuts from the oil and place them on a paper towel-lined plate to drain any excess oil.

  4. Fill and Dust (Optional):
      • If desired, fill a piping bag with apricot jam. Make a small hole in the side of each doughnut and pipe a small amount of jam into the center.
      • Dust the doughnuts with coconut flour for an extra touch of sweetness and texture.

  5. Serve:
      • Allow the doughnuts to cool slightly before serving.
