  1. 4 skinless and boneless chicken breasts
  2. To taste, add salt and pepper.
  3. Half a cup of all-purpose flour
  4. Two huge eggs
  5. One tablespoon of optional Dijon mustard

Crust:

  1. One cup of breadcrumbs (for added crunch, use panko)
  2. One cup of Parmesan cheese, grated
  3. One teaspoon of powdered garlic
  4. One teaspoon of powdered onion
  5. One teaspoon of Italian seasoning
  6. Half a teaspoon of optional paprika
  7. 1/4 tsp black pepper
  8. Chopped fresh parsley (for garnish)
  9. Preparing food:
  10. One-fourth cup olive oil (or more if necessary)

Directions

Get the chicken ready:

  • Set the oven temperature to 400°F, or 200°C.
  • Between two pieces of plastic wrap, carefully pound the chicken breasts until they are about 1/2 inch thick.
  • Sprinkle salt and pepper on the chicken breasts’ two sides.
  • Establish the Breading Station:

Assemble three shallow dishes:

  • One that contains flour,
  • One with Dijon mustard (if using) and beaten eggs,
  • One contains the breadcrumb mixture, which is made up of breadcrumbs, Parmesan, Italian seasoning, paprika, black pepper, garlic powder, and onion powder.

Cover the chicken:

  • Shake off excess flour after dredging each chicken breast.
  • Allow any extra to drop out after dipping it into the egg mixture.
  • Lastly, make sure the chicken is evenly coated by pressing it into the breadcrumb mixture. To get the crumbs to stick, apply a strong press.

Prepare the chicken:

  • Heat the olive oil in a large ovenproof skillet over medium-high heat.
  • Cook the coated chicken breasts in the skillet until golden brown, 3–4 minutes per side. (Depending on the size of your skillet, you might have to cook in batches.)
  • After the skillet is browned, place it in the oven that has been warmed.
