Peanut Butter Chocolate Rice Krispie Treat Cups

 

Ingredients:

For the Rice Krispie Base:

 

3 tbsp unsalted butter

1 package (10 oz) mini marshmallows

5 cups Rice Krispies cereal

For the Peanut Butter Layer:

 

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1/4 cup powdered sugar

For the Chocolate Drizzle:

 

1/2 cup dark chocolate chips

1 tsp coconut oil (optional)

Instructions:

Prepare the Rice Krispie Base:

 

In a large saucepan, melt the butter and marshmallows over low heat, stirring constantly until smooth.

Remove from heat and stir in the Rice Krispies until evenly coated.

Spoon the mixture into muffin tins (lined with cupcake liners), pressing down gently to form the base. Let it cool.

Make the Peanut Butter Layer:

 

In a separate bowl, mix together the peanut butter, honey (or maple syrup), and powdered sugar until smooth and thick.

Spoon the peanut butter mixture into each Rice Krispie cup and press down gently to form an even layer.

Drizzle the Chocolate:

 

In a microwave-safe bowl, melt the chocolate chips with the coconut oil (if using) in the microwave in 20-second intervals, stirring between each, until smooth.

Drizzle the melted chocolate over the peanut butter layer.

Chill and Serve:

 

Refrigerate the cups for at least 1 hour to set.

Once set, remove from the muffin tin and enjoy!
