Pecan Caramel Chex Mix
Components:
- Four cups of Rice Chex cereal, or a combination of Rice Chex and Corn Chex
- One and a half cups of pecans (or a combination of cashews, walnuts, or almonds)
- Two sticks of 1 cup unsalted butter
- One cup of packaged brown sugar
- Half a cup of light corn syrup
- One teaspoon of vanilla extract
- Half a teaspoon of baking soda
- A pinch of salt
Directions:
1. Get the oven ready:
Set the oven temperature to 250°F, or 120°C. Use silicone baking mats or parchment paper to line a sizable baking sheet.
2. Get the pecans and Chex ready:
Put the pecans and Rice Chex cereal in a big mixing basin. Put aside.
3. Prepare the sauce with caramel:
Melt the butter in a medium saucepan over medium heat.
Stir in the salt, corn syrup, and brown sugar after the butter has melted. Stirring continuously, bring the mixture to a boil.
Stop stirring as soon as it starts to boil and cook it for four to five minutes without stirring. A minor thickening of the mixture is expected.
Take off the heat and mix in the baking soda and vanilla extract. Be careful since the caramel will bubble up because to the baking soda!
4. Cover the Pecans and Cereal:
Cover the pecans and Chex with the caramel sauce. Using a spatula, gently swirl to evenly distribute the caramel over the cereal and nuts. Ensure that everything is adequately covered.
5. The Chex Mix is baked:
Cover the prepared baking sheet with a single layer of the coated Chex mix.
To guarantee that the caramel covers the mixture uniformly and doesn’t burn, stir it every 15 minutes while baking it for 45 minutes in a preheated oven.
6. Allow to cool before serving:
Once baked, take the Chex mix out of the oven and allow it to cool for ten to fifteen minutes on the baking sheet. The caramel will solidify as it cools, forming a crispy, sugary layer.
After cooling, divide it up into pieces and store it in an airtight container.

Storage: You may keep this Caramel Pecan Chex Mix for up to one or two weeks at room temperature in an airtight container.
Flavor Variations: For a special twist, you can add additional mix-ins after baking, such as chocolate chips, dried fruit, or even marshmallows.
Nuts: If you don’t like pecans, you can substitute your preferred nuts in their place, or even a mix of nuts and pretzels.
