1 tablespoon dried herbs (e.g., oregano, rosemary, thyme)
2 tablespoons finely chopped fresh herbs (e.g., parsley, basil)

Instructions:

1. Prepare the Yeast Mixture:
In a small bowl, combine the warm water, honey (or granulated sugar), and active dry yeast. Stir gently to mix.
Let the mixture sit for 5-10 minutes, or until it becomes frothy. This indicates that the yeast is active and ready.
2. Make the Dough:
In a large mixing bowl, combine 2 1/2 cups of flour and salt.
Create a well in the center and pour in the yeast mixture and olive oil.
Stir until the dough begins to come together. If the dough is too sticky, gradually add more flour, 1 tablespoon at a time, until a soft dough forms.
Turn the dough out onto a floured surface and knead for about 5-7 minutes, or until smooth and elastic.
3. Let the Dough Rise:
Lightly oil a large bowl and place the dough inside, turning it to coat with oil.
Cover the bowl with a damp cloth or plastic wrap and let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
4. Prepare the Flatbreads:
Punch down the risen dough and turn it out onto a floured surface.
Divide the dough into 6-8 equal portions, depending on the size of flatbreads you prefer.
Roll each portion into a ball and then flatten it with a rolling pin into a thin circle or oval shape, about 1/8 inch thick.
5. Cook the Flatbreads:
Preheat a large skillet or griddle over medium-high heat. A cast-iron skillet works particularly well.
Place one flatbread in the hot skillet and cook for about 1-2 minutes on each side, or until bubbles form and the flatbread is lightly golden brown with some darker spots. Adjust the heat as necessary to avoid burning.
Repeat with the remaining flatbreads, adding a small amount of oil to the skillet if needed.
6. Optional: Add Herbs and Flavors:
If using dried or fresh herbs, you can incorporate them into the dough by kneading them in before the dough rises. Alternatively, sprinkle herbs on the flatbreads before cooking for added flavor.
7. Serve and Enjoy:

Enjoy the flatbreads warm or at room temperature. They’re perfect for wrapping, dipping, or as a side to your favorite dishes.
Store any leftovers in an airtight container at room temperature for up to 3 days. Reheat in a dry skillet or oven to restore softness.
