Pesto Puff Pastry Pinwheels

8 slices prosciutto
1 cup basil pesto
1 package frozen puff pastry (thawed)
1/4 cup Parmesan cheese (grated)
1 egg (beaten, for egg wash)
Prepare the Puff Pastry:
• Preheat the oven to 400°F (200°C).
• Line a baking sheet with parchment paper.
• Unfold the thawed puff pastry sheets on a lightly floured surface.
Assemble the Pinwheels:
• Spread an even layer of basil pesto over each puff pastry sheet.
• Lay the prosciutto slices evenly over the pesto.
• Sprinkle grated Parmesan cheese on top.
Roll and Slice:
• Roll each puff pastry sheet tightly into a log.
• Slice the logs into 1/2-inch thick pinwheels using a sharp knife.
Prepare for Baking:
• Place the pinwheels on the lined baking sheet, leaving about 2 inches between each one.
• Brush the tops with beaten egg for a golden, glossy finish.
Bake:
• Bake for 15–18 minutes, or until the pinwheels are puffed and golden brown.
Serve:
• Allow to cool slightly before serving. These are best enjoyed warm!
