Ingredients

Regarding the Cake:

  1. Two cups of all-purpose flour
  2. Two cups of sugar granules
  3. One cup of softened unsalted butter
  4. Four large eggs
  5. One cup of drained crushed pineapple
  6. One teaspoon of vanilla extract
  7. One teaspoon of baking powder

  9. Half a teaspoon of salt
  10. One cup of pecans, chopped
  11. In regards to the creamy frosting:
  12. One cup of softened cream cheese
  13. Half a cup of softened unsalted butter
  14. Four cups of powdered sugar
  15. One teaspoon of vanilla extract
  16. 2 tablespoons milk (optional, for consistency)

Directions

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing basin, beat the butter and granulated sugar together until light and fluffy.
  • Add the eggs one at a time, mixing thoroughly after each addition.
  • Stir in the drained crushed pineapple and vanilla extract.
  • In a separate dish, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped pecans.
  • Evenly distribute the batter among the cake pans that have been prepared.
  • A toothpick inserted in the center should come out clean after 25 to 30 minutes of baking.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.

2. Prepare the frosting:

  • Beat the butter and cream cheese in a medium bowl until they are creamy and smooth.
  • Add the powdered sugar gradually, making sure to thoroughly mix it in.
