This fusion dish combines the cheesy goodness of pizza with the rolled, saucy format of enchiladas. Each tortilla is filled with classic pizza toppings—pepperoni, cheese, and sauce—then rolled, topped with more cheese and sauce, and air-fried until bubbly and crisp. For the Filling:

4–6 small flour tortillas

1 cup shredded mozzarella cheese

1/2 cup mini pepperoni slices (or turkey/chicken pepperoni)

1/2 cup pizza sauce (plus extra for topping)

1/4 cup chopped bell peppers (optional)

1/4 cup sliced black olives (optional)

1/2 tsp Italian seasoning

1/4 tsp garlic powder

1/2 cup pizza sauce

1/2 cup mozzarella or Italian cheese blend

Extra pepperoni or veggies for garnish

Fresh basil or oregano (optional)

Instructions:

Prep the Filling

In a bowl, mix together:

Mozzarella

Mini pepperoni

Chopped bell peppers and olives (if using)

A few spoonfuls of pizza sauce

Italian seasoning and garlic powder

Roll the Enchiladas

Lay out tortillas and spread 2–3 tablespoons of filling along the center of each.

Roll up tightly like enchiladas.

Lightly spray the tops with oil to help them crisp in the air fryer.

Air Fry the Enchiladas

Preheat air fryer to 375°F (190°C) for 2–3 minutes.

Place enchiladas seam-side down in a lightly greased air fryer basket or on parchment paper.

Spoon 1–2 tablespoons of pizza sauce over each roll
