1 egg yolk
2 tbsp (30g) butter, melted
2 tbsp fresh parsley, chopped (optional)
½ tsp garlic powder
½ tsp salt (adjust to taste)
¼ tsp black pepper
¼ tsp paprika (optional)
For Coating:
½ cup (60g) all-purpose flour
1 egg, beaten
1 cup (100g) breadcrumbs (panko for extra crispiness)
Cooking spray or a light brush of oil
Instructions
Prepare the Potato Mixture
Boil peeled potatoes until fork-tender, then mash until smooth (no lumps!).
